Rice N' Beans Supper
1 stalk celery, finely chopped 1 onion, finely chopped 1 clove garlic, minced 2 to 3 T. cooking oil or bacon grease __________________
1 and 1/4 c. water 1 can (8 oz.) tomato sauce 1 tsp. salt 1/2 tsp. crushed oregano 1/4 tsp. ground cumin 1 c. dry long grain white rice a couple of T. bacon bits or crumbled bacon (optional) 2 c. cooked beans/liquids OR 1 can* beans (about 15 oz.)
In pan: brown celery, onion, garlic in oil or bacon grease. When tender, add water, tomato sauce, salt, oregano, cumin. Stir well. Add rice bacon bits (optional), and beans/liquids. Bring to boiling. Stir. Turn heat to low; cover. Simmer for 20 minutes. Stir. Cover again. Simmer 10 more minutes. Remove from heat. Keep covered another 10 minutes. Ready to serve. Makes 4 to 6 servings.
*a can of beans contains about 1 and 1/2 c. cooked beans + about 1/2 c. liquid. DO NOT throw the liquid away, it contains fiber; the beans cooked in it. If not using this liquid, freeze to use later in soups or gravies.
