Basic Cookie Mix
8 cups all-purpose flour
2½ cups granulated sugar
2 cups brown sugar, firmly packed
4 tsp salt
1½ tsp baking soda
3 cups vegetable shortening
In a large bowl, combine flour, both sugars, salt and baking soda until well blended. Cut in the shortening until evenly distributed. Put in a large airtight contaner. Makes about 16 cups of mix.
**Use above to make....
CHOCOLATE CHIP COOKIES
3 cups Basic Cookie Mix
1 Tbsp milk, more if needed
1 tsp vanilla
1 egg
1 cup chocolate chips
1/2 cup nuts or coconut (optional)
Preheat oven to 375ºF. Grease baking sheets. In a bowl combine first 4 ingredients and blend well. Stir in chocolate chips and coconut/nuts if using. Drop by spoonfuls onto baking sheets. Bake 10-15 minutes, until golden brown. Makes approx 24 cookies.
VERY VANILLA COOKIES (similar to sugar cookies)
3 cups Basic Cookie Mix
1 tsp milk, more if necessary
1½ tsp vanilla
1 egg
sugar or frosting, if desired
Preheat oven to 375º. Grease baking sheets. In a bowl, combine first 4 ingregients and blend well. Drop by spoonsfulls onto baking sheets. Sprinkle with sugar, if desired. Bake 10-15 minutes, until edges are golden. Frost, if desired. Makes approx 24 cookies.
Variations:
*Spice vanilla cookies: add 2 tsp pumpkin pie spice and 1/2 cup nuts to dough.
*Cocoa cookies: Add 2 tbsp cocoa and increase milk to 2 tbsp
SNICKERDOODLES
2½ cups Basic Cookie Mix
1/4 tsp baking soda
1 tsp cream of tartar
1 egg
2 tbsp sugar
1 tsp cinnamon
Preheat oven to 400ºF. In bowl, combine first 4 ingredients and blend well. Combine sugar and cinnamon in a small dish. Shape dough into 1½ inch balls. Roll in sugar-cinnamon mixture and place 2 inches apart on ungreased baking sheets. Flatten balls slightly. Bake 8-10 minutes, until lightly browned with cracked tops. Makes about 30 cookies.
PEANUT BUTTER COOKIES
3 cups Basic Cookie Mix
1/4 cup brown sugar, firmly packed
1 tsp vanilla
2 eggs
1/2 cup chunky-style peanut butter
Preheat oven to 375ºF. Lightly grease baking sheets. Combine all ingredients and blend well. Shape dough into 1 inch balls. Place on prepared baking sheets and flatten with fork tines. Bake 10-12 minutes, until edges are browned. Makes approx 30 cookies.
Variation:
*PB & Jelly Cookies: On baking sheets, press thumb into center of balls - do not flatten dough. Fill with grape jelly.
SPICE BOX COOKIES

1/4 tsp cinnamon
1/4 tsp cloves
1/4 tsp all spice
1/4 tsp vanilla
1/2 cup chopped nuts
In a bowl, combine first 7 ingredients and mix well. Stir in chopped nuts. Shape into a long, 2-inch diameter roll. Cover with plastic wrap and refrigerate 3-4 hours or overnight. Preheat oven to 375ºF. Lightly grease baking sheets. Cut roll into 1/8-inch slices and place on baking sheets. Bake 8-10 minutes, until edges are golden brown. Cool on wire racks. Makes about 30 cookies.
