Pork and beans kielbasa casserole
2 cans pork and beans 1 lb. Kielbasa sliced into 1-inch chunks 1 chopped onion 1 clove minced garlic ½ chopped green pepper 1 stalk of celery 1/3-cup ketchup ¼ cup brown sugar 2 tbsp mustard 2 tbsp corn oil 10 crushed crackers – crumbled
Place corn oil in an ovenproof skillet and heat until hot. Add chopped onion, green pepper, garlic and celery; sauté until the onion is translucent. Add the kielbasa to the pan and cook and stir until heated through. Add ketchup, brown sugar, mustard and two cans of pork and beans. Stir well and remove from heat. Sprinkle with cracker crumbs and bake for 35 minutes at 350º.
Great served with corn bread and a green vegetable.
